Rasmalai Cake

Rasmalai, as we all know, is one of the most prominent sweet dishes in India. Rasmalai is basically a creamy and milky syrup that consists of Chenna (cottage cheese) balls. The syrup is made from milk, sugar, cream, saffron and cardamom. The super soft cottage cheese is the essence of the recipe and makes it a great dessert for a special occasion. The exact taste of rasmalai is very hard to describe. It's light, spongy, spiced with cardamom and aromatic saffron. This dessert is just so irresistible. The name rasmalai comes from two Hindi words, 'ras' meaning juice and 'malai' meaning cream. So I thought why not make this dish which is loved by everyone else into something different? Then came the idea of a Rasmalai Cake.

Rasmalai cake is a soft melt in mouth cake. This cake is eggless. This cake has everything you want. Rasmalai, sweet whipped cream and a delicious spongy cake.


Ingredients:

  • 1 cup milk, hot

  • 1/4 cup + 2 tbsp salted butter

  • 1 tsp green cardamom powder

  • Few strands of saffron

  • 1 & 1/2 cup all purpose flour

  • 1 cup powdered sugar

  • 4 tbsp milk powder

  • 1 tsp baking powder

  • 1/4 tsp baking soda

  • 2 tsp white vinegar


  • Heavy whipping cream, as much as you need

  • Powdered sugar

  • 3/4 tsp green cardamom

  • Few drops of yellow food coloring

  • 2-3 tbsp of milk from rasmalai


  • 250 gm rasmalai milk

  • Pieces of rasmalai

  • Edible rose petals, optional

  • Slices pistachios

Method:

  1. Preheat the oven to 180 C (355 F). Grease a cake pan with butter and line with parchment paper.

  2. In a bowl take hot milk and into that add the butter. Whisk it till the butter melts.

  3. Now add the green cardamom and saffron and give it a good mix.

  4. Now to this mixture sift in all purpose flour, powdered sugar, milk powder, baking powder and baking soda in batches.

  5. Whisk it till there are no visible lumps.

  6. Add in the vinegar and continuously whisk for 10-15 seconds.

  7. Pour it into desired cake pan and bake the cake for 35-40 min or till a skewer inserted in the cake comes out clean.

  8. Let the cake cool down completely.

  9. Once it has cooled down completely. divide the cake into 3 pieces. And is there is a dome on your cake you can always cut and enjoy it with a cup of coffee or tea.

Meanwhile, let's prepare the icing

  1. Whip the cream till stiff peak is formed or until the cream stays intact to the whisk.

  2. You can add as much powdered sugar as you desire.

  3. Add in the green cardamom powder, yellow food coloring and the milk from rasmalai.

Finally,

  1. Put some icing on the cake board so the cake stays intact and put the first layer on.

  2. Add some rasmalai milk to soak the cake, add the whipped cream and rasmalai pieces.

  3. Do this for every cake layer.

  4. Add the end cover the whole cake with remaining icing and remove the excess cream. Now you can decorate it as you want.

  5. You can add rose petals or pistachios on the side.

Notes:

  • If you are using unsalted butter add a pinch of salt in the mixture.

  • The milk from rasmalai can be thick so don't panic while soaking the cake in the milk, it will take some time.

  • You can always make your own rasmalai and make it into a cake!
